Michelle of Life is My Lemonade blog, shares her experience baking a Coconut Cake with Hearty Naturals Coconut Oil.

I believe in not recreating the wheel. For this recipe, I started out with a Betty Crocker Vanilla Cake Mix and enhanced it with coconut flavors. I decided to replace the vegetable oil with the coconut oil.

I added ¾ C. of coconut flakes into the dry cake mix to increase the overall coconut flavor. Then, tossed them together to coat before adding the wet ingredients.

Follow the instructions for the cake mix, and blend for two minutes on high. I like to use the 8 inch deep cake pan from Wilton rather than two small pans. This makes the cake easier to layer.

I made sure to bounce out the bubbles and then baked the cake for 45 minutes at 350 degrees. I have a convection oven so this can vary based on pan and oven.

Although it was  a little harder to layer than normal, the coconut cake turned out moist and delicious.
