Sausage Lentil Soup is a delicious winter dinner!

Many areas of the country are experiencing a colder and snowier than average winter. Snow days can mean being home more and perhaps having more time to cook and bake. You can fill your home with delicious smells and yummy food (how about a loaf of this Coconut Oil Zucchini Bread). We hope that also means your soup pot is bubbling! It’s the perfect time to try new and healthy soup recipes. We love using slow cookers, but you can cook soups on the stove, too.

This sausage lentil soup adapted from The Cooks Next Door is a favorite. It is hearty, delicious, and so easy to put together. It is also gluten free (just check your sausage to make sure it qualifies). You can put it in your slow cooker in the morning and have it ready for dinner when you get home from work or at the end of a long snow day. It’s sure to be a hit with the whole family!

SAUSAGE LENTIL SOUP

1/2 lb. bulk sausage, browned
1 c. carrots, finely diced (or coined)
2 stalks celery, diced
1/2 bell pepper, diced (I like red but any color will do)
1 med. onion, diced
2 cloves garlic, minced
1 c. dry brown lentils, rinsed and drained
6 c. chicken or vegetable stock (or 1 qt. plus 2 c. water)
1 1/2 tsp. salt
1/2 tsp. rosemary
1/2 tsp. dried sage
1/2 tsp. chili powder
1/4 tsp. freshly ground pepper
1/8 tsp. red pepper flakes

Combine all ingredients in the slow cooker. Cook on for low 10-11 hours.

Serve with a green salad and fresh bread, muffins, or biscuits for a simply and nutritious weeknight dinner!
