Coconut oil make the best pancakes!

For awhile now, pancakes made with coconut oil have topped the list of our favorite breakfast foods. The flavor is unbeatable and of course there are the health benefits! The oatmeal in these pancakes boosts the nutrition and sticks with you which keeps you full longer.

These are a Saturday morning staple around here.  Sometimes they have blueberries, sometimes chocolate chips, sometimes cinnamon…you can make them with whatever flavors you like!

COCONUT OIL OATMEAL 
PANCAKES

1 cup oats
1/2 cup whole wheat flour
1/2 cup white flour
1 tablespoon baking powder
1 teaspoon salt
1 1/4 cup milk
2 eggs
1/4 cup coconut oil
More coconut oil for the pan
2 tablespoons honey

1. Heat a little coconut oil on a griddle to coat the pan.
2. Combine all dry ingredients in a large mixing bowl.
3. Heat milk and coconut oil until warm and coconut oil is melted.
4. Add wet ingredients and whisk until batter is combined – the oats will create a slightly lumpy appearance.
5. When the pan is heated, spoon the batter on the griddle (about 1/4 c. per pancake).
6. When bubbles begin to appear, flip and cook for another minute or two.
Top with maple syrup is desired!
