“Fried” Sweet Potatoes

4 medium sweet potatoes
2-3 Tb. coconut oil
1 small onion, diced
Salt & Pepper to taste

Thinly slice sweet potatoes using a sharp knife or mandolin. Add coconut oil to a skillet and allow to melt. Add onions and sweet potatoes and saute until tender. Add salt and pepper to taste.

 

You can easily adapt this to the flavors you prefer. Here are some variations:

1) Saute in coconut oil with cinnamon or pumpkin pie spice and drizzle with a little maple syrup to finish.

2) Saute in coconut oil with other root vegetables for a hash.

3) Saute in coconut oil with apples for a yummy change.

4) Saute in coconut oil and add fresh herbs (like chives) on top for serving.
